Philly Baked Potato Boats

Preparation time: Approx. 15 minutes
Makes one serving; double for date night in!

 
Ingredients:
1 large Idaho Russet potato
1 slice cheddar cheese
Salt
Cracked black pepper
2 T. butter or olive oil
¼ cup raw sliced onion
1 cup water
¼ cup raw mushrooms (canned or fresh)
3 oz. thinly sliced steak or roast beef, cut into thin ribbons
½ cup prepared beef gravy (canned or homemade)
2 T. shredded cheddar or cheddar jack cheese

 

Microwave potato for five minutes on high. (Increase time if cooking more than one potato at a time.) While it’s cooking, add butter/oil to a skillet and warm on medium-high heat. Add raw onion to pan and sauté for two minutes. Adding 1/3 of the water, reduce, sauté and repeat until water is gone and onions are caramelized. Add mushrooms to the caramelized onions in pan and sauté for two more minutes. (If mushrooms are fresh, add another 1/3 cup of water and reduce one more time.)

Add sliced steak and sauté two minutes. Add prepared gravy to the pan and stir into onions, mushrooms and steak. Simmer two minutes. Meanwhile, cut baked potato in half and season inside with salt and pepper to taste. Place slice of cheddar cheese over potato and melt in the microwave for 60-90 seconds.

 Remove cheesy potato from microwave and top with steak, mushroom, onion and gravy mixture. Season again with salt and pepper to taste. Sprinkle shredded cheese over the top. Warm for 30 more seconds in the microwave to melt cheese. Easy and comforting, like a meal from mom!
