Kelly Dreher
Down-to-earth Diva of all things
of the dinner and drinks variety.
There’s an epidemic in America where anything entitled “dip” has to contain cream cheese. That’s gross. And it’s cheating. No. No cream cheese will be consumed here. This dip is made with a variety of chunky seafood, white wine (surprise), real cheese and a savory blend of spices. I took this to a party once and it was gone in minutes. And no one could believe it was cream cheese- free. Oiy.
A lot of home cooks are extremely intimidated by cooking Asian food at home, but they shouldn't be! Arguably, it's even easier to make than regular old American fare, not to mention when you make it instead of ordering out you can control the calorie load and spice level AND you can use cleaner ingredients. I love this dish because it's got that comfort food factor and it's also a great change up from your regular old week night menu. A Diva's gotta bring the spice every once in awhile!
"I'm so FANCY. You already know..."
You have to make this- especially if you're a girl who hates salad. You won't hate this one, I guarantee it. Chopping everything up and mixing throughly ensures that you get all the flavors in every bite- and that you don't smear your lipstick with the pesky large-type leaves found in boring normal salads! The red onion, briny olives and pickled pepperoncini give this a real tangy freshness. And it's pretty, impressive and fast.
Italian Antipasti Board
This chilled, super light, healthy and fresh dish can serve as an appetizer or a meal in itself on a hot summer day! The fresh herbs are key in this one, so spring for some cilantro and a good extra virgin olive oil.
